Chilled Melon Soup recipe

Ingredients:

3 cups of honeydew melon, peeled and cubed.
3 cups of cantaloupe, peeled and cubed.
¼ cup of vodka, divided.
¼ cup of firmly packed brown sugar, divided.
4 teaspoons of fresh lime juice, divided.
¾ cup of sliced strawberries.

Preparation Instructions:

Place the honeydew melon in a blender and process until smooth. Pour into a bowl.

Place the cantaloupe melon in a blender and process until smooth. Pour into a bowl.

To each of the bowls of puréed melon, add 2 tablespoons of vodka, 2 tablespoons of sugar, and 2 teaspoons of lime juice, then stir thoroughly. Cover and chill.

Place the sliced strawberries in blender and process until smooth. Pour into a bowl. Cover and chill.

To serve, pour ½ cup of the cantaloupe mixture into each of 4 individual bowls, then pour ½ cup of honeydew mixture in the center of the cantaloupe mixture.

Dollop each serving with 2 tablespoons of puréed strawberries. Use a wooden pick to swirl decoratively.
