Melon Salsa recipe
Ingredients:
1 ½ cups of diced melon.
½ cup of diced pineapple.
¼ cup of finely diced red onion.
2 tablespoons of minced fresh cilantro.
2 tablespoons of olive oil.
1 tablespoon of raspberry vinegar.
1 tablespoon of lemon juice.
1 teaspoon of seeded and minced serrano chili.
½ teaspoon of finely minced garlic.
½ teaspoon of honey.
Salt and black pepper, to taste.
Preparation Instructions:
In a suitably sized bowl, combine the diced melon, diced pineapple, red onion and minced serrano.
In another bowl, whisk together the olive oil, vinegar, lemon juice, garlic and honey; then season with salt and pepper.
Before serving, combine the two mixtures and gently toss with the cilantro.
